When the temperature starts to drop and I get chilly, you know me... I immediately brew up a hearty, warm, smooooth and savory soup. This potage de patate, or potato vegetable soup ("potage" is like a thick, hearty soup, in French) is simple but elegant, takes less than 30 minutes, and offers a bit of heat in your home and in your belly! I sometimes add some peppercorns or chili flakes, too, when I need that extra spice.
What was especially nice about this batch of soup, was the variety of potatoes I used for the base. I often work with community members and recently a local member of the community brought be a massive bag of potatoes from their home farm! I was incredibly grateful and look forward to returning the favor next season. The bag contained white potatoes, Yukon gold potatoes, red potatoes and even purple potatoes! I opted for the Yukon gold and white potatoes for this soup, although I think I'll try a purple soup next time haha.
So without further ado - please grab a small bit of counter space, a sharp knife and big ol' pot... it's soup time!
Ingredients:
- 1 Tbsp vegetable or olive oil
- 1 onion, diced
- 2 celery stalks, finely diced
- 2 carrots, finely diced
- 5-6 medium potatoes, chopped
- 3 garlic cloves, minced
- 1/2 tsp dried marjoram
- 2 bay leaves
- 4 C vegetable broth
- salt & pepper to taste
- (optional) 1/4 tsp peppercorns or chili flakes
Instructions:
1. Heat oil in a large pot over medium heat. Add onion and sauté for 2-3 minutes, until the onions start to become translucent.
2. Add the rest of the vegetables and spices.
3. Mix well, coating the vegetables in the herbs and garlic.
4. Add vegetable broth and stir. Bring to a boil.
5. Reduce heat to just under medium and let the soup simmer for 20 minutes, or until the vegetables are softened.
6. Pour half the soup in a blender or food processor and blend until smooth. Add back to the rest of the soup in the pot and mix well. This makes the potage thick and creamy!
7. Add salt and pepper to taste, and optional peppercorns or chili flakes.
8. Enjoy!
